  1. Prepare the Beef and Noodles: In a medium bowl, combine the sliced flank steak with 1 tbsp soy sauce, 1 tsp cornstarch, and 1/2 tsp sesame oil. Mix well and set aside to marinate for at least 10 minutes. While the beef is marinating, cook the chow mein noodles according to the package instructions. Drain and rinse with cold water to prevent sticking, then toss with a teaspoon of vegetable oil.
  2. Make the Sauce: In a small bowl, whisk together all the sauce ingredients: 1/4 cup soy sauce, dark soy sauce, oyster sauce, 1 tsp cornstarch, beef broth, and sugar. Set this aside.
  3. Cook the Beef and Aromatics: Heat 1 tbsp of vegetable oil in a large skillet or wok over high heat. Add the marinated beef in a single layer and stir-fry for 2-3 minutes until browned. Remove the beef from the pan and set it aside. Add the remaining 1 tbsp of vegetable oil to the same pan, then add the minced garlic and grated ginger. Sauté for 30 seconds until fragrant.
  4. Stir-fry the Vegetables: Add the sliced onion and julienned carrots to the pan. Stir-fry for 2-3 minutes until they start to soften. Next, add the bok choy and continue to stir-fry for another 1-2 minutes until they are bright green and tender-crisp.
  5. Combine Everything: Add the cooked noodles and the reserved beef back into the pan with the vegetables. Pour the prepared sauce over everything. Use tongs to toss and mix until the noodles and ingredients are evenly coated in the sauce. Stir-fry for 1-2 minutes until the sauce thickens and everything is heated through.
  6. Add the Final Touch: Just before serving, toss in the bean sprouts and stir for a final 30 seconds. Garnish with fresh scallions and sesame seeds if desired, and serve immediately.
