A gourmet Airline Chicken featuring a perfectly pan-seared and roasted chicken breast with the drumette attached, resulting in incredibly crispy skin and succulent meat. This elegant presentation is ideal for dinner parties or a special weeknight meal, ready in just 45 minutes with impressive flavor and presentation.

Ingredients

Directions

  1. Preheat oven to 200°C (400°F). Pat the chicken breasts very dry with paper towels; this is crucial for crispy skin.
  2. In a small bowl, mix olive oil, salt, pepper, and dried thyme. Rub this mixture evenly over the chicken breasts.
  3. Heat a large oven-safe skillet (preferably cast iron) over medium-high heat. Once hot, place chicken breasts skin-side down in the skillet. Sear for 8-10 minutes until the skin is deep golden brown and crispy. Do not move the chicken during this time to ensure maximum crispiness.
  4. Flip the chicken breasts. Add minced garlic, lemon slices, and rosemary sprigs to the skillet around the chicken.
  5. Transfer the skillet to the preheated oven. Roast for 20-25 minutes, or until the internal temperature of the chicken reaches 74°C (165°F) at its thickest part.
  6. Remove from oven and let the chicken rest in the skillet for 5 minutes before serving. This allows the juices to redistribute, ensuring a tender and juicy result.
