Strain the syrup through a fine-mesh sieve to remove the lavender buds. Discard the buds. Let the syrup cool completely. Store in an airtight container in the refrigerator for up to 2 weeks.
Brew 1-2 shots of espresso using an espresso machine, or brew 1/2 cup of strong coffee using your preferred method (French press, Moka pot, etc.). Set aside.
Pour 1 cup milk into a small saucepan and heat over medium-low heat until hot but not boiling. Alternatively, you can steam the milk using an espresso machine's steam wand.
Once hot, use a milk frother (handheld or automatic) to froth the milk until it's light and foamy. If you don't have a frother, you can whisk vigorously or shake hot milk in a sealed jar until foamy.
