This delightful Lavender Latte offers a unique blend of floral notes and rich coffee, creating a wonderfully calming and aromatic beverage.   1. In a small saucepan, combine 1/2 cup granulated sugar, 1/2 cup water, and 1 tbsp dried culinary lavender.
  2. Bring the mixture to a simmer over medium heat, stirring until the sugar completely dissolves.
  3. Once simmering, remove from heat, cover, and let steep for 15-20 minutes to infuse the lavender flavor. Critical tip: Don't steep for too long, as it can make the syrup bitter.
  4. Strain the syrup through a fine-mesh sieve to remove the lavender buds. Discard the buds. Let the syrup cool completely. Store in an airtight container in the refrigerator for up to 2 weeks.
  5. Brew 1-2 shots of espresso using an espresso machine, or brew 1/2 cup of strong coffee using your preferred method (French press, Moka pot, etc.). Set aside.
  6. Pour 1 cup milk into a small saucepan and heat over medium-low heat until hot but not boiling. Alternatively, you can steam the milk using an espresso machine's steam wand.
  7. Once hot, use a milk frother (handheld or automatic) to froth the milk until it's light and foamy. If you don't have a frother, you can whisk vigorously or shake hot milk in a sealed jar until foamy.
  8. Pour 1-2 tablespoons of lavender simple syrup into your serving mug. Adjust the amount to your sweetness preference.
  9. Add the brewed espresso or strong coffee to the mug.
  10. Slowly pour the frothed milk over the coffee and syrup. If desired, spoon any remaining foam on top to create latte art.
  11. Garnish with a few dried lavender sprigs or petals for an elegant touch.
